A Sweet Tribute: Vancouver Chef’s Special Dessert Honors Mother’s Legacy

In the bustling culinary scene of Vancouver, where innovative dishes and creative chefs abound, one chef stands out not only for his culinary expertise but also for the heartfelt story behind one of his signature desserts. Meet Chef Jean-Francis Quaglia, the mastermind behind the acclaimed restaurant, Provence Marinaside, where his culinary creations often reflect his deep-rooted connections to his French heritage and family.

At the heart of Chef Jean-Francis’s menu is a dessert that holds a special place in his heart – “Tarte au Citron.” This delectable treat is more than just a dessert; it is an homage to his late Mother, who was an acclaimed Chef of Marseille’s famed Le Patalain and one of the very first female chefs in France.

Chef Jean-Francis made his first “Tarte au Citron” from his Mother’s recipe at the age of 8, which has been on the menu at Provence Marinaside since it opened in 1997. In his cookbook published in 2007, ‘New World Provence‘, he suggests serving it with local hazelnut brittle, whip cream and seasonal fruit coulis. Yes please!

In August 2021, the government of France honoured Chef Jean-Francis by naming him a Chevalier (Knight) of the Ordre du Merite Agricole – one of France’s highest honours, second only to the Legion of Honour.
